Most cafés with one 2‑group machine are well served by the E65S. For very high volume choose the E80S with 80 mm burrs. If baristas change often or you run several venues, consider a Grind-by-Sync grinder: the E65W or E80W with a scale, or the E65T or E80T dosing by time.
It is a family of Mahlkönig grinders with electric burr adjustment and connectivity. Connected to a machine or the Sync Scale, the grinder receives the time of every extraction and adjusts the grind itself so that the espresso stays on recipe.
A time-based grinder grinds for a set number of seconds. When the coffee, humidity or grind size changes, the dose changes too. A grinder with a scale (W versions) stops at the target weight, so the dose stays the same. Grind-by-Sync T versions dose by time but recalculate it after a grind change.
It depends on burr size and volume. The manufacturer quotes burr life at a medium setting: about 800 kg of coffee for 65 mm burrs, 2,500 kg for 80 mm and 6,000 kg for the 98 mm EK burrs. We plan replacement during maintenance.
